Baked

Last night I made baked Aubergine with Mozarella, Tomatoes, Chilli and Parmezan with pine nuts and risotto. With fresh summers vegetables from the grocers it was yummy! Dave had band practice and for once I didn’t have anything to do, everything on TV was either rubbish or too scary to watch on my own and the book I’m reading is also pretty scary…I know I’m a wimp. I wish I had the Discovery or History Channel…I feel ill informed of late…

  1. oh my that looks lovely! come round and cook again…make that! i’m not sure Ange likes Aubergine but i do, i will have hers.

  2. It’s really easy:

    *Scoop out all the aubergine leaving 1cm of the flesh still in the the shells. Drizzle olive oil on shells then roast for 15mins.
    *Meanwhile reduce down onions, garlic, chopped toms and aubergine flesh with pinch of chilli – for around 20mins till soft.
    *When cooked put all filling in Aubergine shells, top with mozarella and parmezan and cook in oven till melted and bubbly.

    Yum!
